Sabadi Hard Candy - Honey, Mandarin, & Cardamom
Dedella is a small-batch hard candy from Sabadì, the Sicilian chocolate maker. Each one is cooked over an open flame and shaped by hand. It's made with orange blossom honey (zagara) from the Sicilian black bee, a rare native honeybee protected by Slow Food, plus a little mandarin and cardamom.
The honey comes first, floral and soft. Then the mandarin brightens it up, and cardamom adds a warm, slightly spicy finish. The flavor is clean and gentle, nothing like the sharp sweetness of mass-market candy.
Unlike most hard candies, Dedella contains no glucose syrup, so it's made from just four ingredients.
