Sabadi Hard Candy - Honey, Lemon, & Rosemary - Isabella

Isabella is a handmade hard candy from Sabadì, the Sicilian chocolate maker. It's cooked over a direct flame and worked by hand, the way candy used to be made. The base is orange blossom honey (zagara) from the Sicilian black bee, a rare native honeybee protected by Slow Food, flavored with lemon and rosemary.

The honey comes through first, soft and floral, and then bright lemon lifts it. Rosemary finishes it with a fresh, herbal note that makes the candy taste clean rather than sugary. It's a very Mediterranean combination, like a lemon grove with a hedge of wild rosemary beside it.

Like all of Sabadì's candies, Isabella has no glucose syrup. It's made from just four organic ingredients.
