The production of manna is a delicate and ancient process. During the hot Sicilian summer, the sap slowly seeps from incisions in the bark of the ash tree, crystallizing in the sun into pure white filaments known as “manna tears.” This natural sweetness has been treasured for centuries for its purity, light flavor, and gentle aroma.
